Three-Ingredient Pumpkin Cookies

We visited the grandkids a week or so ago, and Princess M and I made the world’s easiest cookies.  You may remember the two-ingredient muffins I blogged about last year.  (See https://wordpress.com/post/crapsmanship.com/297.)  Just pumpkin puree and spice cake mix.  We riffed on that idea, again using one can of pumpkin puree and one spice cake mix.

meg-2Princess M mixed the two ingredients together, with a little help from me because it was fairly stiff dough.

We then added the third ingredient — chocolate chips.  I’m not a very devout measurer, but we probably added one cup or so.

After mixing, we dropped the cookies onto sheet pans lined with parchment paper.  They weren’t very elegant, but who cares?  We baked them at 350 degrees for about 10 minutes. After cooling, we dug in.  They had a cake-y texture instead of a cookie texture, but they were tasty and SO easy to do, even a seven-year-old could do it herself!
