Dan the Man and I visited our kids in Arkansas last weekend. Our DIL Stephanie told me about an easy cake recipe, so Princess M and I decided to give it a try.
We needed a butter cake mix and a can of German chocolate frosting (aka coconut pecan). We made the cake as directed on the package, mixing together some butter, eggs, water, and the cake mix. Then we blended in the whole can of frosting.
Stephanie suggested that we make it in a bundt pan, so I sprayed the bottom of it with Pam, as directed on the cake mix box. Smells of goodness filled the house as the cake baked. Once it was finished, I let it cool and then turned it out of the pan. CRAP ALERT: Massive fail. The cake refused to come out in one piece. I either should have fully greased and floured the Bundt pan or baked it in a flat pan. This is what the cake looked like.

I have to say, though, that the cake was mighty tasty. Lesson learned. Next time, I’ll fully prepare the pan. I think I’ll try a chocolate cake mix with the coconut pecan frosting. And maybe I’ll poke the cake and pour over some Coco Lopez. Or a can of cherry pie mix. Or some additional toasted pecans. Or some candied pecans. Sounds like I’ve got some experimenting to do!
I’ll bet the cake was delicious! I’m going to be making a chocolate caramel poke cake for my friend Kris’s mom’s birthday next week, never made one before and am looking forward to it! I’m going to make the caramel with the sweetened condensed milk and crock pot method.
